flatteing hones (nortons)
When I look at my norton 8k from the side you can clearly see that it's not flat and needs a lot of work. Can I use a DMT 120 grit to to get it back to flatness and then use a DMT 325 to get the surface smooth again?

You can use either, with some good 3M wet/dry 600 paper, wrapped around it, under running water to lap your 8k.

As Hirlau has said, you can use silicon carbide paper on a flat surface, but in the long run, I have found the DMT 325 is so much easier and cleaner to use
