I use a very worn DMT 325 for blades so this won't happen to this degree. I always recommend a 600 if the DMT 325 is not very worn.
You can drag it across your thumbnail on occasion as you hone it on the 1k. This will let you know as it smooths out and it will be time to remove the top layer of tape. Will take lots of work, I expect.

The DMT will keep chipping your edge.
So… doing the same thing, and expecting a different result…
1. Started with 10 passes on a DMT… blade keep the tiny chips in the bevel.
2. I returned on DMT… they are still there.
3. One more time on DMT… no chips in the bevel but it doesn't cut even the arm hairs.
4. I go back on DMT 20 passes… i see tiny chips again in the bevel
5 hours with this. Do you have any i idea what's wrong?
Steel has a memory, Diamond is very aggressive and will leave deep scratches, more so if pressure and excessive laps are used (5 hours).
The deep scratches will turn into edge chips until all the damaged steel is removed.
Yours is a common problem… in a hurry, (low grit, aggressive hone and too much pressure), too close to the problem. (5 hours).
Unless you are removing large chips (1/8 in or larger) bread knife on a 1K, what’s the hurry?
