Right, let's cut to the chase then.
Basically, if they're new, it's possible that they're not designed to actually be used. It's very unlikely that a manufacturer using shave quality steel would have produced a stainless seven day set unless it was a special order. They'd also not miss the chance to stamp their name on one! That said, there's bound to be some bugger here who has one!
If the steel's not shave quality, no matter how much you work on them, they'll never be more than a beautiful & treasured gift from a thoughtful wife, & make a great display.
