    Default Yoshihiro knives

    I had been on the hunt for some new kitchen knives for the past couple of months to replace our old global knives. After a LOT of searching in order to meet both my and my wife's requirement's I finally made a purchase that I received earlier in the week.

    The requirements were

    1) They must be Forged, High carbon steel.
    2) They must be Japanese made.
    3) They must have a western style scale as my wife didn't like the traditional Japanese hand grip.
    4) They must be under $1,000au for a set

    In the end we decided on Yoshihiro knives, shown below.

    I was a little worried to begin with, as there really isn't much information on Yoshihiro. These are probably better then I could have hopped for! The craftsmanship is astonishing, the hammered Damascus is beautiful and the scales really compliment these knives!

    They came probably as sharp as my straight razors and to do some basic honing to get that razor sharp edge back after your wife cuts a pumpkin on a glass cutting board is effortless!

    I would love to know if anyone else on SRP have any Yoshihiro knives and how they hold up after a few years?!

    Is that folded/damascus steel or a hamon line?

    It's 16 layers of Hammered Damascus and they aligned the centre up to be a solid sheet of vg-10 steel to help reduce honing problems, preventing the two steels from over lapping on the bevel like they can do on cheaper Damascus steel blades.

    Nice looking knives. my wife would love to have a set like that to use to pry things open.

    VG-10... now you have to try Shirogami 1 and 2, Aogami 1 and 2, Aogami super and Tamahagane all really nice steels, any of them would also do great in a razor!

    I would really like to get a small collection of hand made Japanese Knives in several different steels! All I need for the moment though is a Japanese Whetstone to sharpen them on.. Only if I had one... Might have to loo online to buy one!

    I've already told her that I would divorce her (Joking offcourse) if she used these for anything other then cutting food. And I've banned the glass cutting board as well :P

    She actually snapped the tip of one of our global knives a while back, after some serious grinding and honing it tired out ok but damn! Knives aren't made for that kind of abuse!!!! lol

    Those look fantastic! Have been (somewhat) saving for a top quality set, nice to see another option.

    They seem to be a reeally good "Bang for the Buck"

    My only nagative so far is they dont do a bread knife to suite this set

    I actually sent an email requesting if they can make a custom made bread knife (Fingers Crossed). If they dont, dose anyone have any suggestions of a bread knife that would look close to these?
