Haha! Thank you for the warm welcome. I recognize several of you already from the scores of hours reading/researching. I’m a new SR shaver- started this year after I decided I needed to shave my beard so I’d have a greater reason to hone my Kamisori.
My main “hang-up” is J-Knives. I’m a chef: been cooking professionally since 1996 and started focusing on sushi in Y2K. It’s a rare night when I don’t have water and steel on some stones in some capacity. Really. I try to sharpen and/or polish every day.
I thought I’d pick up some razors to learn how to build true razor’s edges... you know- to further my understanding of apexes for my work knives. So I got totally enamored with these little tools and naturally fell into a hopeless addiction to learn and practice as much as possible.
I’ve been able to find answers to my questions and develop enough to where I’m not frustrated with my results. Still have a long way to go and I already know I’ll never stop learning, so I finally joined up so I can actively participate. I expect things will get better with participation, based on my experiences learning elsewhere about my knives. Looking forward to it!
So far I only have about a dozen razors. My top 3 are:

Towa (unknown frameback)
I already had a bunch of sharpening equipment for knives so I haven’t needed to invest much to be able to properly hone. Love my JNATs and fortunately I haven’t needed to invest in new stones (but i wanted to so there’s that). I most often use nowadays for my honing progressions:
Chosera 1k
Shapton Glass 2k
Naniwa 4k “Hayabusa”
Naniwa 8k “Fuji” or “Snow White”
A Nagura progression (Botan/Tonjyou/Meijiro/Koma/Tomo) on a JNAT (Ozuko/Narutaki/Nakayama)
Kanayama 70k

There was a fantastic sushi place in Florence. This was around 2000 to 2001.
Ate there 4 times a week.
