William Rodgers.

The cutler's name and its trademark - a picture of a mincing knife and the words "I CUT MY WAY" - proved popular in the late 19th and into the 20th century. Apparently, the firm was established in 1830 and by 1852 had located to St.Thomas Street(when William was about 35 years old).
