Many a year ago when my now ex-brother and sister inlaw moved to the Oregon coast they were thrilled to be able to go 'Crabbing' basically any time they wanted to.
It took about 3 months and they were tired of eating crab no matter how it was fixed or served.

.......Sooooooooooooooo it's been a very long while since I have stopped by and I just got done making dinner and thought I'd pay a visit. This is totally off the cuff but not really. I wanted to make a diabetic friendlier Gumbo without all the roux and rice and came up with this. I'm calling it "Southern soup" ....I know,"how original right":w A melange of okra,collard greens,black eye peas,green pepper,onion,chopped up mushrooms(Portos in this case)lots O Cajun Seasoning,bay leaf and olive oil, touch of heavy creme to the bowl (Optional) tightened up with a little arrow root. and of course turkey and chicken sausage.
Not too bad fella's .......Eat well lads ,eat well.:angel: P.S. its not heavy like regular Gumbo and well, it's not even Gumbo but, it's filling and spicey and the cream gives it a nice velvety smoothness. This is good fall soup for sure......Attachment 311308

Dear Lord,..........not the Linquini with clam sauce ! You know what happens when you order that........ face down in the clam sauce,another victim of the opposition if you know what I mean.:angel: Looks awesome though other than that !!
No pictures but a nice steak dinner to celebrate 29th wedding anniversary with my bride.
10 Oz New York seared at 1600 degrees. Some green stuff and potatoes to balance the plate but the steak was the star.

My neighbor gave me some chicken sausage Gumbo tonight. It was really good. Considering i'm following a bit more of a DB2 diet style, I really don't miss the rice and bonus because of the extra protein . In other words meeeeeeaaaaaat !!!! :)

Had a pork roast in the fridge.......got bored with the same ol same ol so half the roast is in the oven slow roasting in Cajun rub and then I cut some steaks off of it for variety. Of course I am no fine butcher and thus ended up with a few odd pieces.........oops !A skillet full of hot bacon fat and some fresh broccoli in the fridge , "what to do what to do" ?

What's your preferred cajun blend? Or is it homemade? Been getting into jambalaya's lately, but the spice mix I bought (forget the name) leaves a bit to be desired without using up an asinine amount.
I make my own but I was using up the last of a brand called famous Daves rub and it was pretty good. I prefer to make my own and have been for years. You can find lots of good basic recipes and then embellish on it. I don't add salt to mine,I prefer to salt as I go along. Just remember to use the best spices you can afford and after blending you should let your spice cure over night so it wont taste raw.:angel:

Boneless ..skinless chicken thighs ....and the rest
A soup and a meal.......Braised broccoli stems and brats with red onions and garlic. The broth was Cajun spice ,water, salt,bay leaf and olive oil. Those stems are a great food secret. So tasty when they're good and tender. :)
