I use mild chili beans so her taste buds are not offended
I pull my portion out and toss in chipotles and arbol peppers
I made Chili for one of the meets here. Spazola's mom (bless her soul) helped me season so it had a real north Texas taste.
Here we tend to cook on the mild or plain side and let the person who is eating it add what spices they like.
I ruined my breakfast/brunch at work the other day when I accidentaly opened the wrong side of the garilc salt and dumped a table spoon instead of a sprinkle.
I had to throw about half of my leftover hotdish away!:gaah:
Years ago on opening day of deer season, my dad was going with his buddies, my two brothers were going with their buddies and I was going with mine. It was a bit cold and rainy so mom decided that chili and cornbread would be the thing for supper.
So she was cooking the chili and she tasted it and thought that it needed a lot more chili powder so she grabbed the chili and dumped it in. When she put it back in the cupboard she say the label and it said---Cayenne PepperAttachment 349972 she rushed to the chili to scrape it off.
Well it's a good thing that she hadn't stirred it because it was the HOTTEST CHILI I EVER ATE. Hehehe
I've had the COVID this week, and it pretty much put me out of commission, so my wife's been run a bit ragged this week.
Today I felt considerably more human and the bug is waning, so I elected to cook for myself and the good lady, a little thanks for holding the fort this week.
Leg of Gressingham duck with roast potatoes and carrots and some Brussels sprouts. Also put together a little bramble and port sauce for her.
It was pretty damn tasty.

In our house it's the opposite. My lovely bride makes a great chili but no beans. I never met a bean I didn't like. My favorite way to add beans is to add a can of Ranch Style Beans.

Deboned turkey breast, sous vide 8 hours at 145°F, then broiled. This is my favorite way to cook boneless chicken or turkey, or pork loin. No worries about not being cooked enough, but never overcooked or dry. Everybody should have a sous vide wand and tank, along with a sealer-mealer vacuum bagger.
Quick soup to make. Leek and potato.

The new chickens just started laying...had to wait 6 months ( which is the norm ) before I start to see any eggs. But will be good for 3 years of egg production from these girls.
We have 17 Chickens......so eggs will be plentiful now.
Just have to hook up the timer with the light ...now that we don’t have much daylight now a days.
Birds need 14-16 hours of artificial and daylight to keep egg laying at a good clip.
Can't beat the home grown eggs nessmuck. They look great, lotsa different shell colours!!

Made some Boston Baked Beans today...cooked a thick 1 1/2 inch pork chop...made some mushroom gravy with the pan drippings..
Chicken parmesan with a side of spaghetti w/meat sauce, and fresh baked Italian bread with garlic butter.

Was actually Sundays dinner made by the boy.
Haggis neeps and patties, and a glass of old style irn bru.
He also made a pepper sauce, and it was a damned good sauce.
He is only seven though so I supervised, and peeled the turnip, but all the cutting cooking and mixing was him. He did not too bad.

Never had Haggis. But if I were, it'd have to be where it originates from, or from someone who's lived there and made it many times. How would u describe the flavor.? What's it reminiscent of.
A good haggis has a rare of spice to it, peppery and nutmeg.
The texture is of soft crumbly oats, stodgy almost.
Hope that was a sufficient description.
It's similar to black pudding, it not quite as strong a flavour. Alas I have never made one, but I don't imagine the process is too far from making sausages, so might give it a whirl next year.

So a couple of weeks ago I was making the rounds of all the thrift stores looking for crystal and fine glassware, and ran into a pile of these, apparently NOS in the box, for $5, and on impulse I grabbed one. Tonight I finally took it on its maiden voyage and made some mini meat pies.

For filling I just took a 12oz can of walmart generic roast beef, drained off the juice and thickened it with Tony's instant roux, seasoned with Lipton onion soup mix and Slap Ya Mama, mashed and added the meat, and cooked it down a bit. Using store bought pie crust made this a pretty quick and easy project. I had already ate, (crawfish and shrimp chowder) and wife is dieting, so I will eat them tomorrow.
I suspect these pie makers simply didn't sell well locally and got pulled from a store's shelves because in Louisiana, hand pies whether baked or fried, are always the half-moon type, and nobody wanted to try making round ones.

Garden greens and sausage on a bed of white jasmine rice. Most of the greens are the outer leaves from a cabbage I harvested a couple days ago, the last of the 2023 crop. The head is in the fridge, with the last cauliflower of 2023. Meanwhile I just planted the 2024 okra and onions today, and tomorrow I will plant tomatoes and jalapeños.

On Saturday my daughter made fish and chips, and on Sunday my boy made lasagne, well he made all the components, he delegated the building part to me lol.
I'm rather enjoying teaching them both to cook.

For dinner tonight i had a tin of cold baked beans straight out of the can because heating them was dirty saucepan to wash and the microwave doesn't seem to like the can
Being single has one advantage, i can what i like and i don't get told off lol
I kinda miss those days. Though I do most everything around the house as it is.
Wife has are hard time standing and moving around for very long, anymore. It takes her longer thinking about it, than it takes me to do it and be on to other things.

One guy I lived with would put an inch or two of water in a pan and heat the can of soup or beans in the water before eating out of the can.
When I worked in the fields we would put a can of whatever or a hamburger in tinfoil on the manifold of the combine engines.
Lots of ways to avoid doing dishes!
When my son joined Boy Scouts their first 'Camp out' was just out of town and in the churches retreat.
Anyway they were to fix their 'Dinner' in foil packets. I showed him how to make some steak, potatoes and some green beans in foil. Since I would be attending we made THREE---Why Three??? I told him that we'd take three just in case someone didn't have a packet.
Sure as hell there was one kid whose parents didn't give him anything for supper. That was one very happy little kid when we gave him his foil packet.

Got home late Friday and the wife had a really simple med-well steak in the micro and raw broccoli in the fridge. Figured I could do something else.
Sliced it thin and into a small iron skillet with olive oil. Sautéed some jalapeno slices and red onion strings. All the trimmings and ranch dressing.
Was silly good. Wife acted impressed! ;)
