Here is the recipe I used.
2 lbs chuck steak cubed
4 calves kidneys
3 tablespoons oil
3 onions finely chopped
2 tablespoons flour
1 1/2 cups beef broth
1/2 teaspoon salt
Freshely ground black pepper
1 tablespoon Worcestershire sauce
1 bay leaf
1 egg yolk
1 tablespoon milk
Short crust pastry:
1 1/4 cups sifted all purpose flour
1/4 teaspoon salt
3 tablespoons butter cut into smkall pieces
3 tablespoons margarine
3 tablespoons cold water
Trim beef to remove all fat. Chop kindeys into small pieces. Brown beef and kindeys in hot oil. Add onions and cook 5 minutes. Stir in flour and add the beef broth gradually. Season wth salt and pepper. Add worcestershire sauce and bay leaf. Cover and simmer 1 1/2 hours until beef is tender. Transfer to deep 10" pie dish. Top with pastry, cut slits to let steam escape. Brush pastry with egg yolk and milk glaze. Bake at 350 degrees for 35 minutes.
To make pastry, sift flour into a bowl. Add salt and butter and blend with fingertips. When butter is the size of small peal, blend in margarine, Stir in cold water with a fork adding 2 tablespoons, then 1 tablespoon. Form dough into a ball. Wrap in wax paper and chill 20 minutes. Roll pastry on floured board to fit pie plate.
There you go. I can't tell you how accurate to what others remember, but I really liked it.
