It is pricey. But if I buy six at a time I have a lot to work with. I get a good pot of duck fat, 12 legs confit, 12 breasts smoked, and a pot of stock. If you buy one duck you can't do that. Buying in bulk gives me the capability to make full use of all of it. So there is an economy of scale that you don't get with buying one. Plus, I got these on sale via D'Artagnian. So the price was very agreeable. I also got 4 squabs in my order. If you do it right the price isn't so bad.

I very rarely if ever endeavour to cook asian food. But today I decided I was going to risk it.

Beef Tataki, a citrus soy, soy and sweet chilli. Also some onion rings (ok not so Asian)
Sticky rice with corriander. Stir fried shrooms with some chilli lemongrass shallots and something called galangal. Which is apparently related to ginger and smells a bit like parsnip.
We weren't sure about it but glad we gave it a go.

Now there's a meal! Nothing like filling up on meat and potatoes. Add in the veggies and bread, that's good eatin'.
Well tonight it's leftover red beans and rice BUT yesterday for my youngest daughter's belated birthday celebration it was boneless skinless chicken thighs cut in half and rolled in finely minced fresh garlic, rosemary and some fresh cracked black pepper then wrapped in thin cut bacon and finished on the BBQ. The sides were fresh asparagus tossed in extra virgin olive oil with of the seasoning 'salt' and grilled on the BBQ. The potato salad was made with steamed Yukon gold spuds and the last of my Walla Walla Sweet onions. Dessert was homemade carrot cake with homemade buttercream frosting and some homemade vanilla ice cream.

Attempt 2 at an improvised stir fry, with ground pork. Did not have cashews, but I tried adding sesame seeds and a bit of walnuts.
Turned out quite well. But I gots to get me some cashews...

Well I took the pic night before last but forgot to upload and post but here's what was supper on Tuesday/Seafood Soup with clams, bay scallops, shrimp and cod in tomato/chicken broth along with some spices and parsley.
OH! The lone opened clam was one of 4 so I could put one in each bowl/the grandkids were Very Impressed!

Attempt #3 at an improvised stir fry, with ground pork. The following are in a supporting role: garlic, onion, cashews, red pepper, sesame seeds, salt, and black pepper.
A nice portion of brown sticky rice will round it out. Should make three lunches.

We liked the pork katsu sp we decided to try it with beef. It was very nice but I preferred the pork.
