I thynk I am going to decide between the Le Grelot and Henckels!

You can add my vote for the Le Grelot. I'd pick one of those henckels myself if I had the extra cash, but the Le Grelot will expand your shaving options. You've got full hollows covered pretty well I'd say. It's good to try different grinds.
My opinion is that the Le Grelot is one really fine razor and would be my choice for a first razor were it I making the choice from what I know now: Martin of rasurpur.de will assure you that it is shave ready. It is an old stock blade newly ground and once the current supply is gone, there won't be any like them again as a production razor. Next on my list is the 6/8 DOVO special and third would be the Henckels only because I prefer a razor larger than a 5/8.
Read the above knowing that my current favorite razor is a Henckel 7/8 Friodur from the Shaving Shop. Yes, I am a fickle shaver, but I will be returning to a Le Grelot in the relatively near future as it will always be in my rotation, as well as the DOVO turtle, 6/8 of course. And some others, too; it sure is reassuring to know that I got into I got into this straightly shaving thing to save a buck or two. :roflmao

plus you will have to pay the shipping, this would be my choice if you were only going to buy one. This will be more expensive than getting the henckels, both shave great, but the le grelot has a much different feel. You have to get use to stropping with a thumb notch too, I think its a little harder to do. The le grelot comes shave ready and I must say its was very sharp. The henckels is very temping though and if I had an extra 100 bucks lying around I would get one my self.
Definitely the Le Grelot is the better choice IMO... I have one, and it is a great shaving razor!
