I have noticed that some Filarmonicas do not have Jose Monserrat Pou stamped on the shank . Are these later production Fillys made after he left the company? And if so, is there any difference in quality?

I think the unmarked shank razors are the last produced and sold by Classic Shaving. While I don't own one of the later production razors I've seen reports that they are much more difficult to hone (my older ones were a breeze). Take a look in the razor clubs or SOTD and there should be photos of many fine Fillys.
No, these are not the ones from Classic Shaving. I think the ones to which you refer are the sello doro. These ones are exactly like the earlier Fillys in every respect (goldwash, scales etc) except for the missing shank stamp.
If the shank has some nomenclature, Filarmonica or whatever, stamped on it that is a good thing. I only have a a half dozen oldies and I'm at work so I can't check. It is probably "right" if it has some nomenclature stamped in the tang.
This is the Tang of an NOS(until yesterday) Filly I just bought from the lady in Argentina a couple weeks ago
Yes, I agree. The razors are definately genuine Fillys. The question is was there a period of production when Jose was not around - say at the end before Filly closed? Or is this just an occasional production oversight? Might not make a big difference anyway! Most top restaurants you eat in don't have the advertised chef working in the kitchen! I tried to Google info on Jose's biography. Didn't get much. Does anyone have biographical information on him?
Can you take a pic of the tang for my own reference?
There is an example of one recently sold on Ebay ref no 230541583454.
BTW I know the seller and have bought razors from him. He is 100% honest and a first rate seller of only the best Fillys.
What throws me off is the wrappers. When did they stop making Filys?
Did a search through some of my old posts and came up with one that doesn't have the Jose Monserrat Pou tang stamp.
