    Am I right to say that the harder the steel is (i.e. more difficult to hone), the more easier to chip? If this is the case, then the blue tonge damascus might not be my cup...

    How do you compare the ATS 34 stainless stell to the Damascus steel that you have? If you were to only keep one, which one you would keep, and why?
