Yes, the etched surface is protected from rust to some extent. It's basically a patina, like you'd see on a well-seasoned vintage blade. It'll still rust, but it's much less rust-prone than a bare...

Vinegar doesn't clean steel very well... This is a blade I soaked in vinegar. :D
