I wonder why this is , it is just a well made razor with no warps that needs a touch up, pretty simple IMO.

He changes the composition of the steel, in any case it sharpens easy and takes a great edge.

Iwasaki makes his own steel, he uses some kind of Swedish carbon steel that he modifies to his spec to be as close to tamahagane to properties as possible.

that really depends how much work has to be done to set the bevel on the razor. Most new kamisori need bevel set and that is not done on a 12k stone.

Kamisori are a bit specific as far as honing goes
