I find that it helps to use a short handle on the hammer, and keeping the steel hot enough. Keep it nice and yellow when you hit hard, and it won't bounce back.

It's literally like working with play-doh. You hit something, and it squashes in the other directions. Only instead of your hands you use a hammer because your hands are not made for hitting...
