How confident are you that your thermocouple is accurate?

Is there any need to normalise if you're not forging? I suppose that comes down to whether your steel is of a known quality?

The grain certainly looks finer in the last two pictures. I basically follow uddeholme's instructions for their O1 which can be seen here...

It was a gyuto style kitchen knife and it basically broke at the tang. The black area at the top is where your index finger would sit when chopping. I suppose the under side of the choil?
