I thought that was the point of this thread? He thinks his heat treatment might be the cause of the poor edge retention so he's looking for answers. How can you eyeball it until you know what 'it'...

Is there any need to normalise if you're not forging? I suppose that comes down to whether your steel is of a known quality?

It was a gyuto style kitchen knife and it basically broke at the tang. The black area at the top is where your index finger would sit when chopping. I suppose the under side of the choil?
