forgive me for going slightly off topic.. but i have seen photos of dwarven slicing sushi grade tuna and i was wondering which knives you use for this purpose?

i'm mainly a shoemaker who posts up...

i know nothing of hones.. but i worked as a professional chef for many years and used to sharpen my own knives.. i've known guys to sharpen with extremely fine hones and end up with razor sharp...
