Are the Japanese blades that this sharpener is trying to imitate actually done with a 15 degree chisel grind and no micro bevel on the back? My understanding is that the edge is still around 30...

Help me out here. I am trying to see how an uncentered 30 degree included angle would be more durable than a centered one.
