I only just noticed that you said your using a 600 DMT (or eze-lap). Lapping a stone with a 600 DMT will kill the DMT very fast. I would stick to the 325 or under for lapping.

The naniwa 12k does have a "Granite" look to it, this is normal. IMHO the naniwa12k isn't the smoothest hone but you will get used to the feel.

-Clean the stone when it feels like its not honing...
