If the razor is ground funny and the spine is wonky as a consequence, I don't think tape will make much of a difference as far as uneven/wavy bevels go. You are still following the spines profile...

Try looking up swooping X stroke, there may be some hints for dealing with curved toes. Not an expert so the suggestion to do a search and come to your own conclusions.
