Yea, that is the point of doing the bevel set...
Yea, that is the point of doing the bevel set first as you only have so much metal you can remove from the blade sanding it down you may wind up there anyway. Easier to see what you've actually got...

I'd probably try to set the bevel on a 1K hone...
I'd probably try to set the bevel on a 1K hone first to get a clean no pit bevel and edge first before sanding and polishing the rest of the blade. Not talking honing it to a shaving edge just...

The Morley and Sons looks like it is toast due to the corrosion of the edge. You never know though but at least you'll get lots of practice trying to hone past all that corrosion to get to good solid...
