Some blades can be handled easier on the side of the hone. I have my choseras to 10k lapped on 1 side, and my suehiro 20 k. If I have to set a bevel I do it on the 600 then the 3 and up.

DMT 1200 or chosera 1k. The dmts never needs lapping. It just needs to be broken in first. The chosera is a very hard and fast cutter. And doesnt need frequent lapping. My 2 favorites. But as was...
