The ‘gritty’ feeling of the 8k Pro is well documented among knife folks. I don’t think that means much usually. You might want to try the Shapton Glass HC (NOT the HR).

The Shapton 2k, 5k, and 8k Pro have been my main...
The Shapton 2k, 5k, and 8k Pro have been my main sequence for some time now. The 2k and 5k for a few years and I added the 8k about a year ago. They do the job well.
