I've had a couple of these, what I've done is tape the spine, then go to a 600 grit diamond hone to bring the bevel closer to where it should be, so that I don't have to use any really funky strokes...

Could you explain this in a little more detail? Are you basically saying that you should sort of regrind the spine with sandpaper and shape it?
