It really is not complicated - the belly is an artifact from the double grinding, and double grinding is used to achieve higher degree of hollowing, although it doesn't guarantee it.

I don't think so. It's probably just what you're used to and difficulty with the different feedback.
I suspect if you shave for a long period with extra hollows and one day you pick a stiff grind...
