What's the best thing for making sure a stone is true?

I assume they need to be almost perfectly flat. What do you do if there not?

Would you recommend a 10,000 grit hone as well as the King...

Is the King ok? I don't expect something that's £15 to last a lifetime, but would I also need a finer stone?
