I go up to at least 800 but more often 1800 to 3000+ just cause it is then less work and less chance of damaging the temper. Alot of razors can just be polished out with no sanding but it takes alot...

I sand and then go to the stainless. I have never used anything coarser than that except tripoli which is greasy. I don't use it for that reason.
