I find 10-12 on the paste strop, or 5-6 on the barber's stone is usually OK. Then finish on plain leather with about 20-ish. Keep the touch firm, but light ....Quote:

Jmsbcknr, it's not just determining how many strokes to use, but as Dave pointed out, also the amount of pressure to apply. I expect most of use slightly different amounts of pressure and so the amount of strokes required will vary accordingly. In addition to the grit size of the pastes and hones used, the temper of the steel will also make a difference. Harder steel will require more strokes than others.
