I've had strops made from both deer and elk and they work the same as all other strops.
I've tanned a few hides (both kids and about 6 deer) but never thought about using it for a strop. Guess I'll have to pull out some of the left-overs and give it a try. It's brain-tanned, not commercially tanned, so that makes it a little different. There's a definate fleash side versus meat side.

Definitely allow for some stretching with the deer hides when using for strops.

i have home tanned diffrent types of hides for people before to and thought about making a strop out of eather a deer or coon hide so let us know how you like it once you make one and i may try a coon one if your homemade hide strop works well.
I would recommend cutting it across the grain to help reduce the amount of stretching
