There's a Henckels 78 1/2 which is available on a local Auction site for roughly USD18 but has a nice chip out of the toe. Supposedly with bone scales as well.
If the scales are bone, I wouldn't want to shorten them, so would have to make new scales and then leave the originals for some project in the future.
You think it would make a good starter project?

That's got the makings of a lovely shorty Henckel thug. I would bet those to be horn, not bone scales. And at the price point you mentioned, a good deal and a good project.
I have a couple of henckels en route as well for some project work. A 72 1/2 inox and a 14.
Couple weeks out still, but fun winter work I reckon.
