I have been wondering that as well, and in the meantime have finished a set of zebrawood scales finished in CA for a Joseph Rodgers & Sons I picked up a couple of weeks ago in my travels. Wood isn't perfect by any means, but I like working with it, think it looks great, and with modern finishing options should last longer than I will. It's up there with horn (so far!) as my favourite material to work with, although I'm eyeing up some more modern materials to broaden my horizons one of these days. :)

Walnut is plenty nice! I don't think you want to deal with the numerous difficulties of burl wood right now, it can be tricky! I say figure out your design and make a cutout to find the best looking grain for the shape. I like it at an angle, myself. Maybe 20-30* from parallel to the spine.
But there is plenty of good advice early on in this thread!
