Avoid corrosion, specifically on the edge. However, remember that these meat choppers are so thick that you can almost certainly sand the corrosion on the body off. Or have it reground. Personally, I'd rather buy one with a bit of corrosion (not on the edge) for a lot less money, and send it out to be reground and refinished by someone who has the equipment and knows what he is doing, that to pay more for a "clean" one that has been worked on by a hamfisted seller who doesn't know if he is damaging the razor.
