    which should I try to learn the art of honing on first? and why would you start with that particular one?

    The Bengall. It's lost its heel, so there's not much you can do to hurt it further. Plus they take a great edge.

    It also looks to have the most general wear so I was wondering if that might not make a good learner.

    It's not worn enough to affect the honing.

    That Bengal is where you should start. Once you get a feel for it then mov on to the other two. I think you made out real well scout.

    I am in agreement. The Bengall. It has a tapered blade and the heel is gone as Park said. It is still servicable and if you make mistakes along the way, it's no big deal.
