    Bevel should be even along the length of the blade, not tapering toward the heel, yeah? I am realizing my bevel is not set yet. May drop down to 800 King stone for expediency.

    No worries. check back in when the heel is set.
    You can do circles in the heel area alone to set the heel bevel .
    Then do x- strokes to blend the heel into the remainder of the length of the blade.
    Single bevel set?? Yes then move up a grit.
    Your only as good as your last hone job.

    Question - my blade doesn't sit flat on the stone past the heel - kind of bulges out where it meets the shank. If I am doing x strokes to the center of the stone, doesn't it mean I'm grinding the half toward the point more than the heel end? (stone is only slightly wider than blade)

    Sorry, correction - blade is only slightly wider than the stone, not the other way around

    Are you sure you're not setting the stabilizer on the stone? A 45 deg heel leading stroke may help alleviate this issue

    So No shoulders on the dinner table.
    If it doesnt sit flat. WHY??
    After that answer then we will make up a stroke for your blade.
    Pictures now are good. Sharpie test along the bevel and pictured priceless.
    It will tell us where your not hitting and why.
    No shoulders on hone should sit flat.
    Keep at this you will do fine.
    We are going in a direction that is not always a straight line, yet forward.
