Regarding carbon vs. stainless, I've seen tons of threads on the topic, so you might want to do some searching. It seems the quality of the steel is more important than if it is stainless or carbon per se.

Very true, there are lots of carbon steel razors out there that aren't worth shaving with, so probably some SS ones as well.

I can only add one data point here. On May 1, I got my first SS razor from Vintage Blades. It's a Dovo Renaissance and was honed by Lynn. The first shave was really nice, but with a little tiny drag. Over the next 5 shaves, I stropped it with 5 passes on the chrome oxide strop, and 5 more each day, for a total of 105 passes. Each shave was better and better, and after 105 passes on the pasted strop the bevel just flashes in the light. Can't put it down! I shaved 3 times with some of my sharpest carbon blades for comparison, and while those shaves were very good, I still like the inox just a little better. It's that hard-to-describe smoothness quality as opposed to just plain sharpness. And it's a beauty to look at, too!
