Wait -- how in the hell did I get introduced in this thread ? ---- by the way I use my pinky to lightly tap and delicately say " come on little egg -- it's time to open up to the world ---- daddy needs some yellow goodness" ---- on my forehead? what am I a webbed foot redneck swamp monkey or something? --- don't answer that!!!

I typically put eggs into a bowl for baking or making omelettes. I use my right hand, cracking the egg on the side of the bowl, then open the egg into the bowl using the same hand & grip. The grip is thumb, index & middle fingers. YMMV.

Thanked: 5I spent 2.5 years working at McDonald's (i'm a student) and spent quite alot of time working full time mornings where pretty much every sandwich has an egg on it. When the morning rush would hit, It'd be my job for about 3 hours of straight egg cracking. 8 eggs to a rack (to make them the nice little circles), 4 racks at a time wait about 5-10 minutes do it all over again. Managers were always harping at us that we should be able to fill a rack in less than 8 seconds so that all the eggs cook for about the same time. I used a two-handed-crack-em-on-the-grill technique while holding two eggs in each hand (saved me time from having to turn around to pick up another load of eggs). I can also whip up scrambled and folded eggs in a jiffy. Now that i'm done that job, i just crack them on the edge of the pan/bowl/cup/counter. Don't usually check for shells, never had a customer complain and never found one myself. It's surprising how many women will notice a man's ability (or lack thereof) to crack an egg. The situation has come up quite a few times.

I've always cracked on the edge of the bowl or pan, but having read this thread I tried on the counter top today while baking bran muffins (came out yummy btw) and I noticed that it ruptured the shell in a very diffeent way than I was used to. There was no break in the interior lining so folding the egg (with one hand, sometimes I do two, sometimes one) didn't really fold so much as crush before releasing the guts. Even with the smooshed shell in my palm, the egg it fell into the bowl without any shell. I may have to stick with that one for a while.
Then of course you could always ...
Strap it to a hard chair
Shine an intense light on it.
Don't let it rest for hours.
Tell it the other eggs have already sung.
It'll crack.

I love SRP.
Like X, I just tried the flat countertop method. I used to use an edge--frying pan, bowl, whatever--and rarely got shell in the mix.
But the countertop method seemed less prone to let bits of shell fall into the egg. Fewer small pieces or something. I think I'll keep at it this way for a while.
BTW, will anyone else cop to having seen "Sabrina," the original with Audrey Hepburn? THAT was an egg-cracking lesson.
