    Default calling all brewers

    This one's for Kentriv,

    He has interest in brewing and likes ales, so I thought we could help him out and learn from each other at the same time.
    Let's pull out our recipes for wort, must (mead), and anything else you brew along with any tips you can pass along.
    Can't wait to see what somes out of this thread.

    I have an evil recipe for cider. I kind of made it up myself a few years ago after numerous homebrew beer disappointments.
    Everything is guessed so I can't give specific quantities.
    Lots of apples(I like them with skins, it tastes more appley, if that is a real word). I chop them and then blend them to a puree.
    I put them into a press and collect the juice.
    Measure the specific gravity.
    Then I mix the pulp with water and blend again into a soup.
    I put it through the press again. and add the second pressing to the first.
    Then I add a dark sugar to bring the s.g. back to normal(plus a little bit more usually!)
    Then I add a wine yeast. After 1 week it has finished fermenting, and after 2 it has all settled out.
    Syphon off the liquid.
    Chill.
    Drink.

    It usually comes out at about 9% alcohol, and knocks the hell out of anybody that doesn't know its strength, because it tastes very much like apple juice and is refreshing.( it doesn't taste too powerful)
    I gave a friend 3 pints of it once, he drank it fast thinking it was weak and spent the night hugging the toilet.
    It is a great summer drink for a nice hot day.

    Oooh, I love a good cider and a good cider ale as well. Strongbow is one of my all time top drinks. Gives a wicked hangover though, so be careful with that stuff.

    This one is rather different from strongbow. It tastes much more natural, and is totally uncarbonated. It retains loads of apple taste as well, which I think many ciders lose.
    My favourite is my locally brewed cider called cheddar. It is medium sweet and is bright orange. Not sure what they use to make it that colour, but it tastes like real english westcountry.

    Sorry guys. I'm having trouble finding my formulas and its been so long since I brewed anything that none of the formulas are sticking to my memory!

    I just started home brewing, oh, about 2 ½ weeks ago, so I don’t have any great tips to offer, as my first batch of ale isn’t ready yet. I look for hearing other’s tips, though.
