I'm toying with the idea of getting a high quality japanese gyuto. Are there any top quality makers that are in the sub $300 range that stand out? Shigefusa and takeda are two I've looked at that are slightly out of that range, and hard to find. Also, does anyone have any experience with the new super blue steel? Also, pictures of knives I can't afford would be fun to look at, so post em if you got em!

Thanked: 237I'm familiar with all the sites that sell knives, just curious about a good maker that's not super expensive. I was under the impression carter Murray knives were very expensive, but it looks like there are some in my price range. Thanks for the link. I forgot about bruno too, he made me an outstanding razor!

Don't have them yet but Bruno is making mine, as you already have one of his razors then you know his ability and the craftsmanship he puts into his work. Tc

Yoshimitsu AS Gyuto 240mm
I like carter knives, but all the ones I could possibly afford are sold out.
