I'm toying with the idea of getting a high quality japanese gyuto. Are there any top quality makers that are in the sub $300 range that stand out? Shigefusa and takeda are two I've looked at that are slightly out of that range, and hard to find. Also, does anyone have any experience with the new super blue steel? Also, pictures of knives I can't afford would be fun to look at, so post em if you got em!
