Well, I said science education is about teaching scientifically valid theories, not all education.

As for the evolution/natural selection issue, no evolution is just the change of genetic material with successive generations; change with descent as it's usually phrased. Natural selection is just the mechanism that sorts out which changes will be passed on to the descendants.

What you're referring to as undocumented is speciation, the formation of new species through evolutionary changes. But that isn't entirely true either, I linked previously to a list of cases where speciation was shown to occur without doubt and without a need for outside help, but there were lots of specialized biology terms in the article and it got passed over.
