I collect paychecks....
Sometimes I even feel bad about it, I have too much fun to get paid for it. My wife would probably disagree.
I finance my wife's diamond collection. Does that count?

You simply can't read pratchett and NOT like him. And then you like him and....start to collect his stuff. I collect books mostly...nothing else really although I do have a tendancy to REALLY get into anything I see that i like.
watches, pens, razors, knives, stone carvings etc.

I wanted to start collecting the little discworld figurines for which they advertise in the back of his books...
Until I knew the price. Then I decided that spending x hunderd euros (with x > 5) on a bunch of small dust collectors was probably not the wisest course of action.

I had similar thought. Maybe I'll just carve one of my own? I don't know if I could do that since I've only done rought work so far but It's a thought.

I collect fencing sabres. Well, not officially, but I have six now, plus one antique one, and most of mine are "vintage", so I suppose that amounts to a collection.
And oy, books. Lotsa books. Even roleplaying books - I've got two shelves of old WoD books.

I collect Timex Miniature Clocks. From time to time. Ebay was a good source, but now is seems like one buyer has bought them all and sells them for a decent price with exorbitant shipping charges. I'm working on a collection of old unused razor blades to make a picture box for the shave den.

As weird as it may sound, I have a couple
old tooth pulling pliers. They belonged to
my Grand Pa Bias's uncle.
Other things, a few pieces of coal company
script. These were coins that the coal company's
paid miners with in years past.
A few fossilized tree roots that I've found in
stream beds locally.
