If I may make a suggestion: when you see that the bevel is tapering from narrow to wide, you should take it to the grinder again for correction.

Wide bevels or tapering bevels look a bit messy, but more importantly, they will also present the owner with honing issues.
If you look at the older sheffield wedges, when they came from the factory, the bevels were even and very narrow.
Honing a wedge is trivial if the bevels are very fine and even. When they are wide or uneven, honing gets to be a real chore.
Once you have wide bevels, things go downhill fast.
