Dave,
Boiling bacon is exactly what it sounds like though it may not be the bacon you are thinking of, it's essentially a joint of ham.
Stick it in a pot of water and boil for an hour or two, you can't really over boil so boil for as long as you want as long as it doesn't boil dry.
You can flavour the water any way you want, a bit of onion or stock.
I often substitute the water for cider or some apple juice, boiling it in cola is also really good.
You can then glaze and roast it for a while if you like.
Then is ready for whatever you like, putting through cabbage or slicing for sandwiches. I like to keep a chunk in the fridge just for nibbling on.

Once you try the boiling bacon you'll wonder to yourself "Why have I been eating this crap for so long?" when it comes to
corned beef.
