    Default Salsa!

    The gardens of New England are seemingly synchronized forcing huge meaty tomatoes upon every person who hasn't planted a garden. I decide to make salsa with the fifteen pounds of beautiful tomatoes I have been given. An entire head of garlic, a blend of serrano, pablano and jalapeno peppers, a large Vidalia onion, half dozen ribs of celery, the juice of two limes, some cider vinegar, sea salt, fresh cracked black pepper, Tabasco sauce, liquid smoke and my favorite surprise ingredient: molasses, all blended with the hand cut tomatoes then finished by pulsing in the food processor until fairly uniform makes the most deliscious salsa anyone who eats it has ever had.

    Tomorrow (whoops actually later today) we're having a little party. I'll be frying up fresh tortilla chips to go with the salsa. While those chips are coming out of the oil all hot and crispy with a bit of sea salt I will be the most popular cat iin the yard. I'll shoot some pictures of that process. It's so easy and so good I rarely buy bags of chips anymore.

    Looks like a good salsa! I wonder if those vegetables suffered?

    Do you make your own tortilla chips? That is next. Fry 'em and bake 'em. Edit: Missed the writing underneath, my apologies. Grinding your own corn flour is the next step.

    What is liquid smoke? Is it just flavouring? My wife will often heavily roast the peppers in the fire before putting them in the pot to cook with the other ingredients for the salsa. Would that have a similar effect?

    Did any of that ginger make it into your salsa?

    I always laugh to myself when I remember that in Spanish salsa simply means sauce. I won't ever get used to somebody asking me to put salsa (de spageti) on on their noodles or salsa (de manzana) in their pie, for example.

    Liquid smoke is a seasoning that would give you the ability to get smoke-tasting meats, without an outside smoker.
    These are some of them, they come in diferrent flavors, you can find them at the supermarket

    Liquid Smoke is an all natural product. It is truly liquid smoke. It's made by passing smoke through water and reducing the water so the smoke flavor is very concentrated. The ingredients listed on the bottle I have are: hickory smoke, water.

    Yes roasting the peppers will add huge amounts of flavor. Sometimes I will grill all the veggies. Once I actually smoked all the veggies. It was a bit much.
