Anyone ever had elk or buffalo meat??
One of my friends recommended buffalo but I live in Southern IL so if I buy it's going to have to be shipped 2nd day air in an insulated container so with all the cost I want to get my money's worth from the order.
Any recommendation on cuts?
I typically like marbled ribeyes with beef, so I was thinking about that and then I was thinking about the ground to make burgers but I would think with the low fat they wouldn't turn out too well.
Any comments and recommendations about where to buy?

I love both elk and buff, all steak is great! I smoked a buffalo brisket one time for a family function, the family was very appreciative, I used apple wood and smoked it for about eight hours.BTW, you can add beef fat to the burger to get it to stick.

Thanked: 3I grab buffalo steaks at my local Whole Foods all the time. It's much leaner than beef, so be sure to cook it rare or very medium rare or else you'll be eating a piece of leather. It tastes just about like beef.

Thanked: 0My thoughts are like the last poster. Buffalo, or more correctly bison, tastes just like beef to me. It is leaner and has less marbling than beef steers. I have never eaten elk but my mother and uncles swore it was the "sweetest" of the deer meats. By sweet I think they meant it had less gamy flavour than other wild animal meats. Living our here in cattle country I can buy bison at the local grocer but the price will knock your socks off.

Bison is pretty good, but Elk and Moose steaks are real nice. Just stay away from bear salami. It's not good stuff.

Either meat is a treat, but if I were going through the trouble and expense of shipping it I would go with the elk.... I am surprised that you can't find buffalo at a grocery near you it has been making a huge come back because of the health benefits over beef....

I had a feed of elk, washed down with a few jam jars of 'shine when I stayed with a mate in Venal Utah a few years ago. The elk was ver good, nicer than kangaroo which I hunt here with my flintlock rifle. My mates' father used to run shine back in the twenties in Missouri.

Bison and elk burgers are great! Nothing compares to Caribou burgers, but we're not going there.
As for steaks, well, I like bison - much like beef but as everyone already mentioned, a lot leaner.
That makes for some great grilling (use a little wood smoke when you do it- you'll definitely be glad you did!).
