    Default Mastro Livi Santuko

Anybody here ever use Mastro Livi's non-razor products?
I am thinking of getting a new kitchen knife, and would like to hear some opinions on these.

    Many thanks!

    If the Maestro does not.

    Try this.

Hand forged in Japan. Perhaps some of our members in Japan could comment on them.

I have heard only good things.

I have a couple of Livi kitchen knives, including a Santuko. They are just what you would expect from Maestro Livi....completely functional, beautiful, hand crafted tools. Mine were super sharp right out of the box, the knife equivalent of "shave ready". You won't regret getting one (or more).

I'm not familier with the steel used in these knives. Anyone that may have one care to comment?

I'm interested in how different knives/steel work in the kitchen and most western steels are still new to me. I've worked with Japanese steel so much that I have no idea about the rest of the world

This is from the Straight Razor Designs site:

"The Maestro's knives are made from A1 S1 Austenitic Steel and the handles are made from Chromium Molibdeno Steel."

Here's another site that sells some pretty amazing Japanese cutlery.

I'd love a Shigafusa (sp) not so easy to come by and a strong following. Just can't justify the cost at the moment

Ya I saw the steel's name but it tells me nothing, haven't had time to look it us. Plus the numbers don't tell you anything about how it works on the line or at home. How his heat treatment changes the steel, geomitry of the bevels.... ok that was getting a bit geeky
