What's for dinner?
Here:
Chicken quesadillas, kale, and rice. I made the chicken a few days ago and we're working on stripping the last of it away. (Originally baked with salt, pepper, and paprika, it lends itself to "ingredienting" for other things.) The rice is a broken basmati cooked in chicken broth from a previous chicken. The kale is just sauteed with a little salt and olive oil.
I also cooked an artichoke which is bigger than my son's head. We're a little afraid to eat that. Maybe we spent too much time in the sun and it just looks like too much work now...

Thanked: 132Mmm, Kale! I like to prepare it with a little bit of chorizo sausage...probably takes away some of the health benefits, but it sure taste good.

Just rice and beans here; seasoned chili beans, black beans, and pinto beans. It's cheap, but it does the job.

Flank steak, marinated in sherry and brown sugar, then grilled. Catfish dredged in a hot and spicy flour and fried. French cut green beans with a little butter and salt & pepper. Roasted garlic mashed potatoes. Warm rolls with butter. finally, a four-berry cobbler with whipped cream.
