    Default What's for dinner?

    Here:

Chicken quesadillas, kale, and rice. I made the chicken a few days ago and we're working on stripping the last of it away. (Originally baked with salt, pepper, and paprika, it lends itself to "ingredienting" for other things.) The rice is a broken basmati cooked in chicken broth from a previous chicken. The kale is just sauteed with a little salt and olive oil.

I also cooked an artichoke which is bigger than my son's head. We're a little afraid to eat that. Maybe we spent too much time in the sun and it just looks like too much work now...

    You all?

Going to smoke a buffalo brisket Monday and have the family over.

Mmm, Kale! I like to prepare it with a little bit of chorizo sausage...probably takes away some of the health benefits, but it sure taste good.

Just rice and beans here; seasoned chili beans, black beans, and pinto beans. It's cheap, but it does the job.

Flank steak, marinated in sherry and brown sugar, then grilled. Catfish dredged in a hot and spicy flour and fried. French cut green beans with a little butter and salt & pepper. Roasted garlic mashed potatoes. Warm rolls with butter. finally, a four-berry cobbler with whipped cream.

    Enjoy!

My dinner tonight was undercooked terriyaki beef, and overcooked green beans. Eating dinner at work FTL.

Oh, and +1 on the kale w/chorizo. That's good stuff.

Plans changed for Monday. I was going to smoke a small prime rib I purchased just for the occasion. Now we will have too many coming, so I'm smoking ribs. They are slathered in mustard and rub applied. Wrapped up and in the fridge as we speak.

And its Ya'll to us Southerners.

    Enormous artichoke. Really not satisfying.

Tomorrow will be better: Leftover chicken, rice with carrots and blackeyed peas, and chard. OR I might try making a casserole out of a lot of that plus a little more.
