    Default Apple sauce...

    My wife bought a 20 lb bag of potatoes the other day and promptly forgot that she bought them so purchased another 20 bag on friday and now has no idea how she will use them all. So, in an effort to help her use the potatoes I decided that Sunday morning breakfast would be potato pancakes with apple sauce and sour cream but store bought apple sauce does not excite me. I asked my wife if she knew a good brand of apple sauce and she said "If you want quality apple sauce you have to make it yourself.", so I did.

    And this is how I did it:

    Country Apple Sauce

    2 lbs granny smith apples pared, cored and quartered ( approx. 7 1/2 cups)
    1/2 cup water
    1/2 cup sugar

    Bring the water to a boil. Add apples and bring back to a boil. Reduce heat to a simmer and cover, cooking for 20 to 30 minutes stirring occasionally.
    Remove from heat and stir in sugar. If the apple sauce is too lumpy for you at this point just take a potato masher to it.

    Man oh man was that good!!! We ate it hot out of the pot.

    Just a note: it is important that you use a tart firm apple as nothing else will yield great results.

    lucky leaf brand is pretty good and i see they now carry it at the dollar tree so thats even better it isnt too sweet and has a nice tart taste just like yours with the G Smith apples

    I make it all the time. Next time add a tad of lemon juice and a tad of cinnamon and substitute brown sugar for white.

    What does the lemon juice do, other than keep it from browning?

    It's add a certain taste to it. When you make an apple pie lemon juice is a common additive.

    If you don't use lemon juice your apple sauce is likely to be one dementional and insipid, however, if you use a good firm, tart cooking apple lemon juice will not be needed. Cinnamon on the other hand distracts from the apple flavors as far as I am concerned and consider its use on apples the same as I consider ketchup use on gourmet dishes.

    I like to make a "spiced apple sauce" add a good load of lime, cinamon, cloves and a star annice, works well when serving it with a really gamey meat,

    I tried it with brown sugar this morning...MMMmmm GOOD!!! Thanks Mr Spendur!!
